Course Summary

Seaweed has been having a moment in the last 5-10 years as a sustainable food, fertilizer, and pharmaceutical additive. But humans have been in relationship with these marine plants for centuries, and seaweeds deserve more attention than just  as a profitable commodity.

 In this workshop, we'll dive into seaweed botany, phytochemistry, and some of the myth and magic of these watery beings.  

Some of the topics we’ll explore:

— Understanding different seaweed types — red, brown, and green — and identifying species
— How to harvest your own seaweed, safely and sustainably
— Best sourcing practices if you can’t harvest your own
— Preservation, drying, and storage
— Medicinal applications, from cold and flu support to blood sugar regulation
— Culinary tips and recipes
— Seaweed stories, mermaid myths, and underwater magic  

Tasha is the author of a forthcoming book on edible and medicinal seaweeds of North America, available from Storey Publishing in autumn 2025.  

About the Instructor

Tasha Greenwood (they/them) is a clinical herbalist, educator, and artist. Their herbal teachers have included lauren giambrone, mandana boushee, Jade Alicandro-Mace, the folks at the California School of Herbal Studies, and at the Vermont Center for Integrative Herbalism. Their current projects weaving together ocean and plant medicine can be found @byssal_threads. Along with their partner Devon, Tasha is a co-founder of MXED GREENS, an apothecary, herbal education space and art studio in Easthampton, MA, on Nipmuc + Pocumtuc land. Tasha provides clinical consultations, formulates products, and facilitates workshops and events. When not hanging with the plants, they can be found in the nearest body of salt water, playing with natural dyes, or experimenting in the kitchen.
